
This session will analyze how far we have come and what techniques are currently practiced to increase phenolic richness in wines. Much attention is paid to the enhancement of final wine quality through vineyard cultural practices, namely pruning, canopy management, crop load adjustment and irrigation techniques. Are we arriving at the level of wine quality that our cultural practices are aimed at meeting? What are viticulturists relying on to farm for flavors or tannins -- are these techniques effective and what are the incentives being offered?
