Day Don't think the
Unified Wine & Grape Symposium stops on Thursday
this year. On Friday, the Aroma
Symposium continues with an in-depth look at how
viticultural parameters and practices affect final wine
sensory attributes.
"Because of its
viticultural basis, the Aroma Symposium should hold wide
appeal to both grape growers as well as winemakers,"
says Dr. John Thorngate the program chairman for the
2009 Unified Wine & Grape Symposium.
"The Aroma Symposium is
very timely, given that harvest decisions have evolved
from the days when Brix and acidity defined grape
ripeness," said Thorngate. "More recently we've seen an
increased interest in grape phenolics as ripeness
criteria, but the holy grail will be to reliably and
reproducibly harvest based upon flavor attributes,
whether actual or potential."
The day's activities will
include panel discussions with an collection of
international speakers, and attendees will be able to
taste wines associated with some of the ongoing
research.
Registration for the Aroma
Symposium is not included as part of the regular
registration for the Unified Symposium, so make sure you
add it when registering. If you have already registered
but didn't include the Aroma Symposium, you can return
to the Unified Symposium Web site and add it to your
registration.
