Spice Up Your Wine and Discover the Benefits of Enological Additives
Winemaking Session in Spanish

(Presented in Spanish)

This session is based on attending an enology or viticulture workshop (9:00 am – 10:30 am) and two sessions in Spanish (10:45 am – 12:00 pm and 1:30 pm – 3:30 pm) You have to attend three sessions to receive a certificate. A certificate of attendance will be sent after the conference.

Fining agents are a winemaking tool to improve the wine sensory attributes, in this session we will discuss the most common fining agents and how to use them. In addition, the panelists will explain the use of tannins as supplements for the wines a few weeks before bottling, and how to use them and what are their benefits.

Susana Rodriguez Vasquez
Peltier Winery, California

Susana Rodriguez Vasquez (Susy) is the winemaker for Peltier winery (Lodi, Ca). She studied B.S. in Agronomy at Universidad Mayor de San Simon (Cochabamba, Bolivia), to further continue her studies in the US, focused on Organic crops at California State University, San Luis Obispo. She received the Certificate of completion IOIA/CCOF Organic crop Inspection training and the Winemaker Certificate Program at UC Davis Viticulture Department.

Federico Casassa
California Polytechnic State University, San Luis Obispo

Dr. Federico Casassa received a BS in Viticulture and a MS in Enology from the School of Agronomic Sciences in Mendoza (Argentina), and a Ph.D. in Wine Chemistry and Sensory Analysis from Washington State University (USA). He is an Associate Professor of Enology with the Wine and Viticulture Department of Cal Poly San Luis Obispo.

Silvia Cedeño
ConeTech Iberica, Spain

Silvia received a degree in Agricultural engineering from the University of Zaragoza, Spain and a second degree from La Rioja University in Winemaking. She then traveled around the world learning various methods of international winemaking. Silvia spent four years as Production Manager in a wine cooperative in D.O. Calatayud, worked in Germany in the Mosel area, and worked at About Wine and Style Consult in Neustadt Weinstrasse. Silvia joined ConeTech Iberica in 2015 as Production Enologist, quickly becoming ConeTech’s Technical Director for Europe and finally General Manager
