Tecnologías Modernas “Detrás de Escena” para la Estabilización y Ajuste de Vinos Previo al Embotellado
Sesión de enología en español

Esta sesión se basa en la asistencia a un taller de enología o viticultura (9:00 am – 10:30 am) y dos sesiones integradas en español (10:45 am – 12:00 pm y 1:30 pm – 3:30 pm ) Tienes que asistir a tres sesiones para recibir un certificado. Se enviará un certificado de asistencia después de la conferencia.

Distintos métodos físicos y químicos son utilizados para ajustar y preparer los vinos previo al embotellado. Desde filtración y separación con membranas hasta ajustes del contenido de alcohol por destilación al vacío y el uso de resinas de intercambio iónico, son todas tecnologías a disposición del enólogo. En esta session un panel de enólogos experimentados discutirán las consideraciones que tienen en cuenta al momento de usar estas herramientas, cuáles son sus ventajas y cuales sus desventajas.

Gaspar Roby’s career span a range of roles within the end-to-end wine supply chain in large and small, public and privately held companies. He began as a Viticulturist and Vineyard Manager in Mendoza, Argentina, before moving to California, where he continued his winegrowing career in the Napa Valley, working for grape growers such as Andy Beckstoffer.

Silvia Cedeño
ConeTech Iberica, Spain

Silvia received a degree in Agricultural engineering from the University of Zaragoza, Spain and a second degree from La Rioja University in Winemaking. She then traveled around the world learning various methods of international winemaking. Silvia spent four years as Production Manager in a wine cooperative in D.O. Calatayud, worked in Germany in the Mosel area, and worked at About Wine and Style Consult in Neustadt Weinstrasse. Silvia joined ConeTech Iberica in 2015 as Production Enologist, quickly becoming ConeTech’s Technical Director for Europe and finally General Manager

Harry Hansen
Sterling Vineyards, California

Harry Hansen is winemaker and general manager at Sterling Vineyards in Calistoga, a Treasury Wine Estates property. Harry has made wines in Napa Valley, the Central Coast and Carneros, in addition to internal consulting in Chile, New Zealand, Italy, and Mexico. With 30+ years of winemaking experience, and both a Master’s in Enology (UCD) and MBA (Sonoma State), he is well acquainted with the wine stability issues he will be addressing and their potential effects on commercial wines. Harry lives in Sonoma County with his wife Graciela, also a UCD Enology graduate.
